    Red currants for making wine can be used either fresh or frozen, after defrosting. Some winemakers recommend not to wash the currants or even separate them from the tassels, believing that the berries contain wine bacteria necessary for fermentation. This is indeed true. But with spoiled berries and herbs, pathogenic microbes can also be introduced into the wort, which, instead of fermentation, form mold and spoil the product.

    Therefore, the berries need to be carefully sorted, all debris, leaves, twigs and rotten berries removed. We place the berries in a deep bowl; do not use metal containers to prepare the base for wine, in which oxidation of the berry juice can occur. A ceramic or glass container works well.

    If there are only a few berries, you can grind them with a hand push. A large number of berries can be crushed using an electrical appliance with suitable functionality.

    Place the berry mass in a glass jar, add sugar and fill with cold boiled water. Close the jar with a nylon lid and leave to ferment at room temperature; it is convenient to put the jar in a closed cabinet in the kitchen. We stand for about 10 days.

    To periodically check the condition of the berry preparation, stir the contents of the jar for better fermentation. Then we filter the liquid; we no longer need the berry pulp.

    We close the jar with the wort with a water seal or put a clean rubber thin glove on the neck of the jar, in one of the fingers we make a small hole to allow gases to escape during fermentation. We leave it for another two weeks.

    After the specified time, filter the wine again through gauze folded in several layers. And leave it for two weeks at room temperature. A small foam should form on the surface of the liquid, which means fermentation is still going on, you need to strain again. We repeat the procedure until fermentation (formation of foam on the surface) stops.

    Then add sugar to the wine to taste, you can add some other spices for flavor, stir until the sugar dissolves. Leave for another week at room temperature under a water seal. We pour the wine into bottles, cork them and store them in the refrigerator or cellar. Or you can serve it right away. This wine can be stored in a cool place for about 5 years.

About three years ago I made redcurrant wine. There was a lot of it at the dacha back then, so I decided to try making wine for the first time. I liked it very much. This year there were also a lot of red currants, so I decided to make wine from them again. To do this, I chose a recipe for homemade redcurrant wine. This recipe is not much different from the one I used to make wine three years ago. Only here it is recommended to mash the currants and add water and sugar to the resulting puree. And then I just poured sugar into the berries and didn’t even add water. The future wine stood for ten days in a dark place in three-liter and one-liter jars. After ten days, I strained it. There is enough liquid left for half a three-liter jar. I didn’t make a water seal, I just put a rubber glove on the neck of the jar. So the wine stood for another week and a half. During this time, foam formed on the surface. I strained the wine again. And left it for another week. Within a week the foam had not appeared again, so I decided it was time to bottle the wine. The wine turned out delicious, sweet and sour. It is not viscous, it flows like ordinary water. It was a very pleasant drink. One glass does not cloud your mind, but a pleasant warmth spreads inside.
