Watermelon rind jam with lemon

Do you like watermelon? Prepare it for the winter in the form of jam! Very convenient waste-free production. Children eat the juicy pulp with pleasure, and fortunately, I am left with watermelon rinds, which were mercilessly thrown away until I found such a simple recipe from Galina Poskrebysheva back in 2000. True, she suggested making candied fruits, but I left them in the form of jam. Since then, every year I wait for thick-walled watermelons (Krasnodar, mostly) and cook this yummy.

    Grate the lemon zest and squeeze the juice out of the lemon.

Very unusual, tasty and beautiful! Thank you! Next time I’ll try not adding lemon juice, but cutting the lemon into small pieces. And, perhaps, I’ll take 2 lemons, not 1. I’d like to add a sour note. But it looks magical! Amber gummies 😋

Thanks for the recipe! I decided to try “zero-waste production” because we love watermelons and eat a lot. The result was a delicious and unusual jam! I didn’t peel the zest, I just cut the lemon into cubes like the peels, it turned out to be a neat mass. The pieces are not overcooked, dense, there is something to chew))), just the way I like it.
