Viburnum jam
A dessert made from the latest and healthiest berry. Viburnum jam is a dessert with a unique taste. Viburnum berries are very useful and have medicinal properties. They need to be collected in late autumn, when they are covered with frost. Then the excess bitterness goes away from them. The process of making jam takes a lot of time, but it's worth it. A tasty and aromatic dessert can be used as a filling for baked goods or simply spread on bread.
Step-by-step preparation

STEP 1
Ingredients.

We separate the viburnum berries from the branches and wash them.
STEP 3
We transfer the berries to a convenient pan or basin, where we will cook the jam. Pour in water until it just covers the berries.
STEP 4
Boil the viburnum until soft, place in a colander, and let the water drain.
STEP 5
We rub the berries through a sieve with a wooden spoon, separating the seeds and skins. We get puree. We can use a meat grinder or blender.
STEP 6
The pureed mass must be weighed. I got 480 grams of puree. Transfer the puree into a saucepan and add sugar at a ratio of 1:1. Mix.
STEP 7
Cook the jam, stirring frequently, over medium heat until thickened, 20-25 minutes. Place hot into sterile jars and seal. Store in a cool place.
