Tsuiwan Mongolian noodles with meat and vegetables
Ingredients
Step-by-step preparation
STEP 1
How to make tsuiwan, Mongolian noodles with meat and vegetables at home? Prepare the ingredients according to the list. Start by making homemade noodles. Beat the egg into a deep bowl and whisk it with the addition of salt until the mixture is homogeneous in consistency.
STEP 2
Pour in cold clean water, a couple of tablespoons of vegetable oil and stir.
STEP 3
Add the sifted flour and knead the elastic dough. Depending on the quality of flour, you may need a little more or a little less. You can read more about flour and its properties in a separate article, link at the end of the recipe.
STEP 4
Knead the dough with your hands on a floured table until it no longer sticks to your hands. Then put it back into the bowl, cover with a towel and leave to rest for 20 minutes. During this time, gluten will develop in the flour, and the dough will become more pliable.
STEP 5
The meat used in a traditional dish is beef, fresh and young. Rinse the meat thoroughly and cut into small cubes or strips.
STEP 6
The set of vegetables in tsuiwan usually consists of carrots, onions, bell peppers and garlic, everything that perfectly complements and improves the taste of meat. Peel the onions and cut into cubes or feathers.
STEP 7
Wash the carrots, peel and cut into thin strips or small cubes. Wash the bell pepper and cut out the stalk with seeds. Cut the pulp into cubes or half rings. Peel the garlic and finely chop with a knife.
STEP 8
Roll out the rested dough into a thin layer, grease it with vegetable oil and roll loosely into a roll. Steam this roll in the slow cooker or steamer for 20 minutes to prevent it from unwinding while cooking.
STEP 9
Heat vegetable oil in a frying pan. Read about how to choose the ideal frying pan, as well as how to choose the right vegetable oil in separate articles, links at the end of the recipe. Place the cooked meat in the oil and fry it over medium heat for about 5 minutes, stirring constantly. Pour in soy sauce and stir.
STEP 10
Then add carrots and onions. Fry everything together for about 5 more minutes.
STEP 11
Add remaining vegetables, salt and spices. Fry the meat and vegetables, stirring, for another 5 minutes.
STEP 12
Let the roll cool slightly and cut into wide strips - noodles.
STEP 13
Pour a glass of water into the pan and stir. Cover the pan with a lid and simmer the vegetables and meat for about 25 minutes, then add the cooked noodles, stir and fry everything together for another 5 minutes.
STEP 14
Tsuiwan is ready. Serve dishes sprinkled with green onions. Bon appetit!
