STEP 1

How to make tomatoes and peppers for the winter without sterilization? Prepare your food. Tomatoes can be taken of any variety and color, but without damage, dents, and elastic. Do not take overripe and underripe ones, choose a medium stage and closer to active ripening, they will be the most delicious. I had cherry tomatoes at just this level of ripeness.
STEP 2

The first thing you need to do is prepare the jars; everything else won’t take much time and effort. Wash the jars with baking soda and rinse well under running water. Place wet in a cold oven with the neck down, and also place the lids. Turn on 150 degrees, after reaching the set temperature, sterilize jars of 0.5-0.7 l for 9 minutes, 1 l for 15 minutes, 2 l for 20. I have been using this method for many years, it has not let me down. You can use any convenient for you.
STEP 3

Wash vegetables and herbs well under cool running water and let the water drain.
STEP 4

Sterilized jars can be dry or wet, but not hot, but warm. At the bottom of the jars we put a currant and cherry leaf, a bay leaf, an umbrella of dill, spices, and cut a clove of garlic. I put 1 clove, 5 black peppercorns and 3 allspice peas in one 0.5 liter jar.
STEP 5

Fill the jars to the top with tomatoes, inserting slices of cut bell pepper along the edges, another sprig of parsley and place a small umbrella of dill on top. Slowly pour boiling water into the center of the jar, cover with a lid and leave for 15 minutes.
STEP 6

After 15 minutes, pour the water into a saucepan or saucepan, add 2 tbsp. sugar with a small slide and 2 tsp. salt without a slide. Bring the water to a boil and let simmer for a couple of minutes.

Pour a teaspoon of 9% vinegar directly into the jar.
STEP 8

Then pour in the boiling brine overflow; in a jar with vinegar it will become a tasty marinade. Let sit for half a minute until all the bubbles rise to the surface and screw on the lid. If there is not enough brine, just add boiling water.
STEP 9

Roll the jar over the board, checking for leaks, wipe dry and turn it over onto the lid. Cover with a fur coat and leave until completely cool. Then store in a cool, dark storage area or refrigerator. Banks fit well in an apartment, but in a cool place. After opening a jar, 0.5 liters are usually eaten immediately, but if not eaten, store in the refrigerator.
