Step-by-step preparation
STEP 1
How to make tomatoes in Armenian style? Prepare all products according to the list. Take tomatoes of approximately the same size, ripe with thick skin. Use any herbs you like. Basil, oregano, parsley, dill and cilantro are perfect for this recipe.
STEP 2
First of all, prepare the brine. By the time you pour the brine over the tomatoes, it should be at room temperature. Those. The brine must have time to cool. Pour water into the pan, add salt and bay leaves. If the tomato variety is not very sweet, then I sometimes add 1 tsp. sugar for a more balanced taste of the finished snack. After boiling, boil the brine for two to three minutes and remove the pan from the heat.
STEP 3
Remove the stems from the tomatoes. Wash and dry the tomatoes and hot peppers. Peel the garlic. Rinse the greens and garlic cloves in cold water.
STEP 4
Finely chop the dill, parsley, basil and cilantro. Pass the garlic through a press, and chop the chili pepper randomly and not coarsely. Mix everything thoroughly.
STEP 5
On each tomato, make deep cuts crosswise, not reaching the bottom.
STEP 6
Stuff the tomatoes with a flavorful herb and garlic filling.
STEP 7
Place the tomatoes in a suitable sized container or pan. Place 2-3 more bay leaves between the tomatoes if desired.
STEP 8
Pour in the cooled brine until it completely covers all the tomatoes. Cover with a lid and leave at room temperature for three days. To prevent the tomatoes from floating and always being in the brine, I first covered them with a small saucer and a lid on top.
STEP 9
In three days, the most aromatic tomatoes are ready!
STEP 10
Serve them to the table as an appetizer.
STEP 11
Armenian tomatoes will perfectly complement meat dishes, kebabs, potatoes and much more.
STEP 12
For longer storage, the container with tomatoes can be placed in the refrigerator.
