    Wash the eggs very well and dry them. Don't skip this step as they are used raw. Separate the eggs into whites and yolks. Do this very carefully; even a small amount of yolk will prevent the whites from whipping. I specifically use a glass to separate the whites one at a time. In case of failure, the entire mass of proteins will not spoil.

    Pour sugar into the yolks. You can reduce its amount to your liking. Beat the yolks with sugar with a mixer until fluffy and light.

    Add mascarpone to the yolks and stir in with a hand whisk. You should get a fairly thick, homogeneous mass.

    Pour a pinch of salt into the whites - it will help the whites whip faster. Beat the whites with a mixer until stiff peaks form.

    Add the whipped whites to the cheese mixture in portions, stirring gently with a whisk. If the cream starts to get too runny, you can stop and not add all the whites. I used about 3 egg whites.

    Take a deep shape, square or rectangular. Pour the coffee into a plate with sides. You can use both boiled and instant coffee. It must be strong. You can add alcohol to it - cognac, rum or liqueur. I cook without it, since the children will eat the dessert. Dip the cookie sticks into the coffee for a second - they will get soggy very quickly. Place the cookies in one layer in the mold, where a whole stick does not fit, break it.

    Spread half of the cream onto the cookies in an even layer.

    Next, lay out the second half of the cookies. Try to place the sticks in the same order as on the bottom, then the cut of the dessert will be nice and even.
