STEP 1
How to make a finger-licking pumpkin for the winter? Prepare the vegetables.
STEP 2
Pour 50 ml of vegetable oil into a thick-bottomed saucepan or saucepan. While the oil is heating, peel and cut the onion into small pieces. Pour it into hot oil, sauté, but do not fry too much.
STEP 3
As soon as you smell the fried onions, add the sliced carrots and chopped bell peppers. Stir and leave to simmer for 5-7 minutes. You can cover it with a lid.
STEP 4
While the vegetables are simmering, remove the rind and seeds from the pumpkin. Cut 500 grams of pumpkin pulp into large pieces, approximately 2x2 cm in size. Add the pumpkin to the pan with the rest of the vegetables. Cover with a lid and simmer for 10 minutes, stirring. The pumpkin pieces should become soft, but not lose their shape.
STEP 5
Meanwhile, prepare the tomatoes. First, remove the skins from the tomatoes. Then grind the tomatoes in a meat grinder or finely chop them, as is more convenient and familiar to you.
STEP 6
Add tomato pulp to pumpkin. Instead of fresh tomatoes, you can add two tablespoons of tomato paste. Increase the heat a little and evaporate the juice slightly.
STEP 7
Add 3-4 cloves of finely chopped garlic and a mixture of ground peppers to the salad.
STEP 8
Add one tablespoon of salt and sugar. Stir and simmer the vegetables for another 5-7 minutes over low heat.
STEP 9
At the very end of cooking, when all the vegetables are ready, pour in 1.5 tablespoons of 9% vinegar. At this stage, you can grind the vegetables with a blender if you want to get caviar as a result.
STEP 10
Place the hot salad (caviar) into sterilized jars no larger than 500 ml. Roll up hermetically with lids heated in boiling water. Wrap the jars and let the workpiece cool completely. Store in a cool place.
