Step-by-step preparation
STEP 1
How to prepare duck stew in the oven for the winter at home? Prepare the necessary ingredients. Wash the duck, remove skin and excess fat. Boneless pieces are useful for stewing. Breast and other smaller pieces of carcass are ideal.
STEP 2
Cut the meat into portioned cubes. The duck pieces should not be too wet after washing. If there is excess moisture, you need to remove it with a paper towel. Place the duck in a dry bowl. Salt and pepper the meat to taste and mix thoroughly. Cover the bowl with cling film and leave in the refrigerator for about one hour.
STEP 3
Jars for future stews should be washed in advance, preferably with soda, and dried. Place spices in the bottom of each jar. I put a small bay leaf, one bud of cloves and one pea of allspice.
STEP 4
Then place the prepared duck pieces into the jars. Try to lay out the pieces tightly so that there are no large air cavities between them. But there is no need to compact the meat excessively. The jars should be filled to two-thirds of the total volume.
STEP 5
From a piece of foil, folded in half, form peculiar lids for the jars and press them tightly to the necks, trying to achieve relative tightness. Place the jars on a baking sheet, also pre-lined with food foil. Place the stew in a cold oven. Turn on the oven to 150 degrees. Cooking time is two hours. Then increase the temperature to 180 degrees and bake for another hour.
