Stewed beets with carrots and onions

Ingredients
Step-by-step preparation
STEP 1
How to make stewed beets with carrots and onions? Prepare all the necessary ingredients. The most delicious stewed beets are made in the fall after harvesting the vegetables. That's when the vegetables are juicy and tasty. Choose vegetables that are firm and have no signs of spoilage. Wash beets and carrots, rinse and dry dill.
STEP 2
Peel the onions and rinse with cold water so that when cutting they do not sting your eyes. The onion can be cut into half rings or small cubes, it all depends on your preference. Heat oil in a frying pan and add chopped onion. Fry the onion over medium heat for about 3-5 minutes, stirring occasionally.
STEP 3
Peel the carrots and grate on a coarse grater. Place the grated carrots in a frying pan with the fried onions and stir.
STEP 4
Peel the beets as well, grate them on a coarse grater and add them to the pan with the rest of the vegetables.
STEP 5
Fry the vegetables over medium heat for about 3-5 minutes, stirring to prevent them from burning.
STEP 6
Pour water into the pan, cover with a lid and simmer the beets with carrots and onions until the vegetables are ready. It took me about 15 minutes. The exact time depends on the operation of your stove. If there is liquid left in the pan, remove the lid and fry for some more time until the liquid disappears.
STEP 7
Add salt and pepper to taste, finely grated garlic to the vegetables and stir. You can also add your favorite spices at this stage. Cook the vegetables for about 1 minute longer and remove the pan from the heat.
STEP 8
Stewed beets with carrots and onions is ready. Arrange the vegetables on plates and serve. If you add a little more oil and vinegar when frying, and then roll them into sterilized jars, you will get a preparation for the winter that will help you out at any time.
STEP 9
This stewed beets with carrots and onions can be served hot as a separate dish. When cold, it is a wonderful appetizer on any table. It is low in calories and is suitable for those who are watching their figure. It also adds great variety to the table during Lent. Bon appetit!
