The process of beating meat disrupts its integrity of the fiber structure and, when cooked, the meat can become tough. Pour vegetable oil over the oil and coat it well on all sides. The oil will create a protective film and during marinating all the juices will remain inside.

    Salt the steak. In general, it is recommended to salt all meat products at the very end of cooking, because... salt removes water from all foods, and without liquid the steak will turn out dry. But we have already created a protective film on the meat from vegetable oil, so we can add salt now.

    Add chopped garlic. You can chop it with a knife, grate it, or put it through a press. If you don't have fresh garlic, you can easily replace it with garlic powder.

    Leave the meat to marinate. The optimal marinating time is from 30 minutes to 2 hours. It is necessary to marinate at room temperature. Or, if you are marinating in the refrigerator for a long time, remove the steak from there in advance to warm it up. This will allow the meat to cook more evenly.

EVGENIY, our family loves grilled steaks and always prepares for it thoroughly. Meat, if, as in your case, it is beef, we buy young heifers at the collective farm market, and specifically the sirloin. Sometimes we take it on the bone, and sometimes we use pulp, but in any case we cut good, thick steaks to make it juicier. We take marinating them seriously, since beef is tougher meat than pork, so we marinate it longer, like yours. We really didn’t do it with ketchup, but we’ll definitely try this option.
