Squid soup

Step-by-step preparation
STEP 1
How to cook squid soup? Prepare your ingredients. You can cook it in vegetable or fish broth, as well as in water. First wash the tops of the vegetables, peel them, wash and dry. Peel the onion. Greens, if you use them, also wash and dry.
STEP 2
Wash the squid, dry it, remove skin and films (if the squid is unpeeled), remove the chord, if any. Cut the prepared squid into rings.
STEP 3
Chop peeled potatoes and carrots for soup. Cut the potatoes into cubes, slices or cubes.
STEP 4
Cut the carrots into small pieces: cubes or strips.
STEP 5
Pour fish broth or water into the pan, place the whole onion and put on fire. Bring the broth to a boil over medium heat.
STEP 6
When the broth boils, add the chopped potatoes. Salt and pepper. Bring to a boil and cook over medium heat for about 5 minutes.
STEP 7
Add carrots to the soup. Cook for another 10-15 minutes or a little longer, until the carrots are soft. If you wish, you can fry the onions and carrots in vegetable oil. I didn’t start frying because I didn’t want to increase the calorie content of the dish by adding oil.
STEP 8
Place the squid rings in the pan. Cook for no longer than 1 minute so that the squid does not lose its softness. Remove the pan from the heat.
STEP 9
If desired, add chopped parsley or dill to the soup.
STEP 10
Pour the hot soup into bowls. If you wish, you can add a slice of lemon to each plate. Bon appetit!
