Sour cream pie with plums

STEP 2
Turn on the oven at 200 degrees. Line a springform pan with a diameter of 26 cm with baking paper and secure the sides. Grease the sides with oil. Cut the plums in half and remove the pit.
STEP 3
Beat eggs with sugar and vanilla. It’s very convenient to do this in a food processor. While the eggs are whipping, put the sour cream in a bowl, pour apple cider vinegar into the middle, and pour baking soda on top. Mix quickly. Everything should swell and become covered with bubbles.
STEP 4
Pour sour cream into the egg mixture and immediately pour all the flour on top. Mix quickly with a whisk at high speed until smooth, literally thirty seconds. If you stir for too long, the dough will shrink.
STEP 5
Pour the dough into the mold and level it with a spatula.
STEP 6
Place the halves of plums on top, submerging them slightly, as much as will fit. We cut the rest into quarters and stuff them into the empty spaces.
STEP 7
Bake for 10-15 minutes, then reduce the temperature to 160 degrees and bake until done. In my oven it took a total of forty minutes to bake. During the baking process, the plum gives juice and soaks the top of the pie. Cool the cake slightly and only then remove it from the pan onto a plate. You can sprinkle it with powdered sugar, or you can leave it like that. The pie tastes best the next day. Happy baking!
