    Prepare the mushrooms: Wash the champignons, peel them, cut them into 4 parts /if large, then into slices/. Defrost frozen wild mushrooms, soak dried mushrooms in water, and boil fresh ones in water for 10 minutes.

    Melt butter in a thick-bottomed saucepan, fry onions and carrots. Add mushrooms, stir and fry for 5 - 7 minutes.

    Pour the prepared broth into the vegetables and mushrooms, add the potatoes and cook over low heat until they are ready. Chop the meat from the broth and add it to the almost finished soup. Grate the processed cheese / first keep it in the freezer for 10 minutes / and add it to the soup, stirring constantly until it just dissolves. Turn off the stove. Add pepper and herbs to the soup and let stand.

    Prepare garlic croutons /optional/: Fry the loaf or baguette with a very small amount of vegetable oil. Soak a clove of garlic in salt and grate the crouton on both sides. And that’s it - you can start a delicious meal. Soup with chicken, mushrooms and melted cheese is ready! Bon appetit !

For lunch I made soup with chicken, mushrooms and melted cheese. For the broth I used chicken legs rather than fillets. In addition to the champignons, I took some frozen wild mushrooms. I prepared the soup according to the author's recipe. And I also decided not to ignore the advice to fry croutons with garlic. It turned out to be a delicious soup! With the aroma of mushrooms, with a delicate creamy taste. And the crispy garlic croutons when serving came in very handy! Thanks for the recipe, Blue-Eyed!
