    Start kneading with a spoon or a mixer with the dough attachment. I used a mixer. When the dough comes together, we will mix it with our hands.

    Grease your hands with vegetable oil and continue kneading the dough - knead on the table for 5-7 minutes, it should become elastic and pliable. Then put the dough back into a bowl greased with vegetable oil, forming it into a bun. Since flour varies, you may need a little less or more.     Divide the risen dough into several equal parts - I got 7 pieces for medium-sized pies. Roll them into balls. The dough should turn out so that you don’t need to sprinkle flour on the table, but if necessary, you can add a little flour.

    Mash each ball into a cake with your hands or use a rolling pin. At this stage, you can lay out the filling that you have planned. This dough is not sweet, so it will go well with both sweet and savory fillings.

    Place the pieces on a baking sheet lined with baking paper or parchment - no need to grease. You can place the pies with the seam up or down - it's at your discretion. Leave the pies to proof for 20 minutes under cling film.

Over the weekend I baked soft pies in the oven for the family. I liked the composition of the dough, so I kneaded twice as much at once. It took me about 100 g more flour, I used the first grade. I used a little less yeast, it rises well for me. I kneaded the dough first with a spoon and then with my hands. At this stage, I always knead for at least 10 minutes so that the dough becomes homogeneous, smooth and does not stick to my hands. It took me an hour in a bag in a hot kitchen (~30°)). The filling was made from apples. I cleaned them, cut them into pieces and stewed them in butter and sugar until the cut was transparent. I placed it on a baking sheet, seam side up, I was worried that the filling would leak, but everything went well, the pies were intact). I got 16 pieces. They are soft and rosy! The dough is fluffy, airy and quite neutral in taste. Wonderful pies!
