STEP 1
How to make compote from thorns for the winter? Prepare your food. The berries must be well ripe for the drink to be aromatic, bright and tasty. Rinse the sloe well under running water, sort the berries, remove rotten fruits, debris and tails. Place the thorns in a colander to drain thoroughly. You need to prepare jars for compote in advance.
STEP 2
You can use jars of any size. If the family is large, then take three-liter ones. Wash the jars with soda solution and sterilize. Read about different methods of sterilization and other tips on preparations at the link at the end of the recipe. Also sterilize the lids.
STEP 3
Place the sloe berries in prepared jars so that they occupy one third of the volume. Boil water, it is better to take it with a reserve. Pour boiling water over the sloe into the jars until it reaches the neck. Cover the jars with lids and leave for 15 minutes. The thorn has a very delicate and thin skin, and hot water can cause it to burst, but there is nothing wrong with that, it will not spoil the taste.
STEP 4
After 15 minutes, pour the water from the jars with sloe into an enamel pan; they now sell convenient lids with holes so that the berries do not fall out of the jars. Add sugar and place the pan on the fire. Bring the syrup to a boil. Stir the water with a spoon until the sugar is completely dissolved. Pour the boiling syrup into the jars of sloe. Add a pinch of citric acid to each jar; it will improve the taste and color of the compote. Cover the jars with lids.
STEP 5
Turn the jars upside down and wrap them in something warm. Let the jars of compote cool completely in this form, or better yet, leave them overnight. In this simple way, you will additionally sterilize the lids and check the tightness of the screws. Store the cooled compote in the pantry. Sloe compote will be stored well at room temperature.
STEP 6
In principle, the drink will already be drinkable, but it’s better to keep it for a week or two so that it becomes richer in taste. If you find the compote too sweet, dilute it with boiled cold water. Bon appetit!
