Shortbread cookies with jam

STEP 1

How to make shortbread with jam? Prepare your food. Sift the flour first; this will not only remove any possible debris, but also saturate it with oxygen, which will make the baked goods airier. Choose high-quality butter, without additives, that complies with GOST. The taste of the finished cookies will depend on this. Any jam will do, but it’s better if it’s thick. Add a little starch to the liquid jam.
STEP 2

Remove the butter from the refrigerator in advance, cut into pieces and leave for 30 minutes at room temperature to soften.
STEP 3

When the butter becomes completely soft, pour sugar into it and beat with a mixer until fluffy and light.
STEP 4

Add the egg yolk to the butter-sugar mixture and stir.
STEP 5

Pour flour into it and mix the dough with a spoon. Attention! You may need more or less flour. Focus on the consistency of the dough. If the dough is sticky, add a little more flour. But little by little, exactly until the dough stops sticking to your hands.
STEP 6

Form the dough into a smooth ball.
STEP 7

Then, on a table dusted with flour, roll out the dough into a layer 5 mm thick. Cut circles out of it. When cutting, dip the mold in flour so that it does not stick to the dough.
STEP 8

Cover a baking sheet with parchment and place the cookie dough on it. Make a small indentation in the center of each piece.
STEP 9

Place fruit or berry jam into the depressions.
STEP 10

Bake cookies in the oven for 10-12 minutes at 180 degrees. There is no need to bake longer to prevent them from becoming hard. For the same reason, immediately remove the cookies from the hot baking sheet. Serve warm. Bon appetit!
