Shortbread cookies with jam on Viennese margarine

Crispy, fragrant homemade shortbread cookies for tea! In one cookbook I found this recipe for simple baking “Viennese cookies”. In appearance it is very reminiscent of the familiar grated pie, although there were still differences... It turns out crispier, thanks to which, in my opinion, it really looks like a cookie.

  1. STEP 1

    STEP 1

Measure out the required ingredients from the list. Be sure to sift the flour to saturate it with oxygen. The quality of baking will largely depend on this. Remove the margarine from the refrigerator in advance so that it has time to soften.

  2. STEP 2

    STEP 2

In a separate container, mix eggs with sugar. It is not necessary to use a mixer; just shake the mixture with a whisk until the sugar crystals are completely dissolved. You can replace it with a sweetener that is not afraid of heat treatment.

  3. STEP 3

    STEP 3

    Add a pinch of salt.

  4. STEP 4

    STEP 4

    Whisk until light foam appears.

  5. STEP 5

    STEP 5

Place the softened margarine in a bowl and mix with a small amount of sifted flour. Grind into crumbs with your hands. Margarine can be replaced with butter, but the classic version of the recipe uses margarine.

  6. STEP 6

    STEP 6

This is how you get such a not very fine crumb (as in the photo).

  7. STEP 7

    STEP 7

Add chopped margarine to the egg mixture.

  8. STEP 8

    STEP 8

Add a packet of vanilla sugar. You can replace it with vanilla according to the instructions (on the tip of the knife). Be careful with the dosage of vanillin; if you add more than necessary, the taste of the baked goods will be bitter.

  9. STEP 9

    STEP 9

    Stir the mixture until smooth.

  10. STEP 10

    STEP 10

Separately, mix baking powder with a small amount of flour, add it to the dough, this way it will be better distributed. You can replace it with baking soda (1 teaspoon) quenched with 3% vinegar (1 tablespoon). There is no need to mix it separately with flour. Add immediately to the dough. Add the remaining flour in portions. You may need a little more or less, depending on how much the dough takes. Focus on your desired consistency. It should turn out pretty cool.

  11. STEP 11

    STEP 11

Knead into a thick, soft dough. There is no need to knead the dough for a long time so that the margarine or butter does not melt and flow from the warmth of your hands. Gather the dough into a ball.

  12. STEP 12

    STEP 12

Divide into 2 unequal parts. Place the smaller one in a bag and place it in the freezer for at least 15 minutes.

  13. STEP 13

    STEP 13

Spread the second large portion evenly on the baking sheet with your hands. Lightly grease the bottom of the mold with refined sunflower oil or butter.

  14. STEP 14

    STEP 14

Spread the dough into a thin layer, forming low sides.

  15. STEP 15

    STEP 15

Brush the top of the dough layer with any thick jam. It is better if it is sour (I took apple jam). If you only have liquid jam, you can strain it through a sieve. Do not add too much of it, otherwise it will leak out during baking.

  16. STEP 16

    STEP 16

Remove the second part of the dough from the freezer. Grate on a coarse grater immediately over the pie, covering the filling with crumbs.

  17. STEP 17

    STEP 17

In advance (10-15 minutes before baking), preheat the oven to 180 degrees. Bake the pie for about 30-40 minutes until golden brown. Baking time and temperature can be changed. Everything will depend on the characteristics of your equipment. When the top of the baked goods is browned, check the doneness with a wooden toothpick. Pierce the pie in several places, if it comes out without any raw dough sticking, it's ready.

  18. STEP 18

    STEP 18

Remove the baking sheet with the pie from the oven. Let it cool. Cut into squares of equal size.

  19. STEP 19

    STEP 19

Brew aromatic tea and invite your family. Enjoy your tea!

this is the real “grated”. on margarine, and where sugar is first mixed with eggs. all other recipes using butter “without impurities” are variations of marketers)
