Sea buckthorn jam

Ingredients
Step-by-step preparation
STEP 1

How to make sea buckthorn jam at home? Prepare your food. It is advisable to take your own berries, freshly picked. Collecting sea buckthorn is not so easy and there are many different ways: someone spreads an oilcloth under the tree, then shakes it and collects the fallen berries. Someone cuts branches and then picks berries from them. I am a supporter of the traditional method: I pick berries from a bush, I get 1 kg per hour.
STEP 2

When harvesting sea buckthorn, the main thing is that the berries do not burst and remain intact. Sort the berries well, remove excess debris, leaves and needles.
STEP 3

Rinse well under running water using a sieve or colander. Rinse the berries very well with moderately hot water: otherwise the jam may ferment.
STEP 4

Prepare the container in which you will cook the jam. This should be a saucepan or saucepan with a thick bottom, preferably with a non-stick coating (aluminum and enamel dishes are undesirable - the jam may burn. Place the berries in the pan.
STEP 5

Add sugar and leave for a while so that the berries give juice. The time can vary from 1 hour to a day. The main thing is not to add water - the jam will turn out watery. When cooking there should be only berries, berry juice and sugar. If you wish, you can add flavorings to the jam: cinnamon, vanilla, cloves. A spoonful of cocoa powder would also be appropriate - the jam will have a chocolate flavor. Or add chopped nuts for a savory taste
STEP 6

This is what the berries look like with the juice released after steeping for 4 hours and stirring. Bring the contents of the pan to a boil over medium heat, then reduce the heat to low and simmer for 45 minutes. Do not forget to stir constantly so that the jam does not burn and skim off the foam. Then remove the jam from the heat and let it cool - this will make it thicker.
STEP 7

Sterilize the jars in any convenient way - I put a spoon in clean jars and pour boiling water over them, then drain the water. Boil the roofs
STEP 8

Divide the jam into jars.
STEP 9

Close with lids. Store in an apartment, without a refrigerator.
STEP 10

Bon appetit!
