STEP 1

How to make sea buckthorn jam for the winter? Prepare your food. If possible, take sea buckthorn that is juicy and ripe, bright orange, sweet and sour. Water - preferably bottled or filtered.
STEP 2

Sort the freshly harvested sea buckthorn, remove the tails, leaves and debris. Rinse the berries and place them in a colander to drain.
STEP 3

Start cooking the sugar syrup. Heat water in a non-oxidizing saucepan and bring it to a boil. Add sugar, stir immediately and simmer the syrup over low heat until the sugar crystals are completely dissolved and the syrup thickens slightly.
STEP 4

Dip the prepared sea buckthorn berries into the syrup and stir. Cook the jam for five minutes from the moment the syrup boils. Remove the foam that forms on the surface of the berry mixture with a slotted spoon. Then turn off the fire. Sterilize jars in any way convenient for you. Boil the lids.
STEP 5

Some of the berries will burst when heated, and some will remain intact in the jam, which will make this delicacy more beautiful and original. Place the jam in pre-sterilized jars. Roll up the jars with clean lids. Let the jam cool at room temperature and store it in the refrigerator or other cool place. Sea buckthorn jam is ready for the winter!
