    Start cooking the sugar syrup. Heat water in a non-oxidizing saucepan and bring it to a boil. Add sugar, stir immediately and simmer the syrup over low heat until the sugar crystals are completely dissolved and the syrup thickens slightly.

    Dip the prepared sea buckthorn berries into the syrup and stir. Cook the jam for five minutes from the moment the syrup boils. Remove the foam that forms on the surface of the berry mixture with a slotted spoon. Then turn off the fire. Sterilize jars in any way convenient for you. Boil the lids.

    Some of the berries will burst when heated, and some will remain intact in the jam, which will make this delicacy more beautiful and original. Place the jam in pre-sterilized jars. Well, I didn’t quite follow this recipe. More precisely, the proportions are still the same, only I pureed mine to a puree. By family request only. The jam is certainly a bomb - so aromatic, bright, tasty that it’s just fire! And besides, it’s also very useful! I got a little of it, I will give it out in a rationed amount, a teaspoon a day.
