Sandwich Croque Madame

STEP 1
How to make a croque madame sandwich? Prepare your ingredients. To begin, we will be preparing the bechamel sauce, so prepare the ingredients directly for it. You can take milk of any fat content, but butter is good, no less than 72%.
STEP 2
Take a small frying pan or saucepan with a thick bottom. Melt butter in it. This must be done over low heat, otherwise the oil will start to burn.
STEP 3
Once the butter has melted, add flour to the saucepan. And immediately start stirring it with oil. It is convenient to do this with a small whisk. If this is not the case, then take a spatula. Keep the oil and flour on the fire for a little while and let them fry. Don't forget to stir them all the time.
STEP 4
Pour milk into the saucepan in a thin stream and stirring constantly. Stir very vigorously, the flour must be well mixed, otherwise lumps of unmixed flour may remain in the sauce.
STEP 5
Cook the sauce for a few minutes until thickened, whisking constantly. I also added a pinch of salt. The sauce turns out quite thick, like thick semolina porridge. Leave it to cool and work on the sandwiches.
STEP 6
Prepare ingredients for making sandwiches. I made two sandwiches - a croque madame and a croque monsieur. You can use any bread, but white is better. Even a simple loaf will do. The cheese in the French recipe should be Gruyère. If you find it - great, if not - take any. The mustard should not be spicy, I took it with grains.
STEP 7
Spread two pieces of bread with soft butter.
STEP 8
Spread mustard over the butter.
STEP 9
Grate the cheese on a fine grater.
STEP 10
Sprinkle grated cheese over the spread pieces of bread.
STEP 11
Place slices of ham on top of the grated cheese. I have very thin cut meat, I put it folded. Place thick pieces without folding.
STEP 12
Sprinkle a little more cheese on top of the ham. Top with a second piece of bread.
STEP 13
Take a baking sheet and line it with parchment. Or a Teflon mat, like mine. Place sandwiches on it. Preheat the oven to 180-200°C, top-bottom mode. Place the baking tray with sandwiches in it for 5-7 minutes. Determine the exact baking time and temperature based on your oven. The bread should become golden brown and the cheese should melt.
STEP 14
While the sandwiches are baking, prepare the fried eggs. It is ideal to make it in a portioned frying pan; it will turn out smooth and round. But it will do just fine on a regular one. You can then cut it straight. First, heat a little butter in a frying pan and then crack an egg into it. It is important that the yolk remains intact and liquid, and the white is completely set. Salt and pepper the fried egg.
STEP 15
Meanwhile, the sandwiches have already browned, remove them from the oven, but do not turn off the oven itself. Spread sauce on top of each sandwich. And then sprinkle with cheese.
STEP 16
Place the sandwiches in the oven for a couple more minutes until the cheese melts.
STEP 17
Serve the finished sandwiches immediately. For a croque madame sandwich, top with a fried egg. Serve the croque monsieur as is.
