Sand baskets with jam

All your guests will be delighted with these baskets! The baskets turn out very tasty and very elegant in appearance. They are very easy to prepare and, apart from the time it takes to cool the dough, they are quite quick. To make the cooking process faster, I advise you to prepare the dough the night before, wait until the dough has cooled a little, put it in the molds and cool it until it is baked directly in the molds. Help yourself!

Step-by-step preparation

  1. STEP 1

    STEP 1

    First, let's prepare the dough.

  2. STEP 2

    STEP 2

To do this, beat butter at room temperature until fluffy.

  3. STEP 3

    STEP 3

Add the egg, powdered sugar, a pinch of salt and milk, whisk everything thoroughly until smooth.

  4. STEP 4

    STEP 4

Sift the flour and add to the butter mixture.

  5. STEP 5

    STEP 5

Using a mixer, knead the soft dough. There is no need to knead the dough for a long time, just stir in all the flour.

  6. STEP 6

    STEP 6

Gather the dough into a ball (do not knead the dough). Wrap in film or put in a bag and put in the refrigerator for 30-40 minutes.

  7. STEP 7

    STEP 7

Take the chilled dough out of the refrigerator and roll it out into a layer about 3 mm thick.

  8. STEP 8

    STEP 8

Place the dough into portioned molds. (I had a small piece of dough left over and used it to make cookies). Place the molds back into the refrigerator for 20 minutes.

  9. STEP 9

    STEP 9

We take out the molds with dough from the refrigerator, carefully prick the surface of the dough with a fork, cover the top with baking paper and pour in beans (or other suitable weight). Bake the baskets in this form in an oven preheated to 180 C for about 15 minutes.

  10. STEP 10

    STEP 10

After 15 minutes, remove the load and send the baskets to bake for another 10 minutes until the dough is completely cooked.

  11. STEP 11

    STEP 11

While the baskets are baking, you can make the meringue.

  12. STEP 12

    STEP 12

For this we will prepare syrup. Mix water and sugar in a saucepan. Stirring constantly to dissolve the sugar, bring the mixture to a boil.

  13. STEP 13

    STEP 13

Cook the syrup until the temperature reaches 118 C (approximately after boiling, boil the syrup for about 5 minutes at a low boil).

  14. STEP 14

    STEP 14

As soon as the syrup boils, begin to beat the egg whites until they reach a stable foam.

  15. STEP 15

    STEP 15

Pour the finished syrup in a thin stream onto the running mixer blades. Beat the mixture until thick and shiny.

  16. STEP 16

    STEP 16

Fill the finished baskets with your favorite thick jam.

  17. STEP 17

    STEP 17

Spread the meringue on top using a pastry bag or just a spoon.

  18. STEP 18

    STEP 18

To gild the meringue, place the baskets in an oven preheated to 220 C for 3 minutes or until the meringue turns brown (watch carefully, this happens quickly). Remove the baskets from the oven, let cool slightly and are ready to serve. Bon appetit!

A very good recipe for making baskets. They turn out very tasty and really crispy. Instead of jam, I actually added another filling and they also turned out quite tasty. Since I made the filling with meat, I put less powdered sugar in the basket, but added a little salt. They looked great on the table...

I’m very glad that the recipe was useful for snack baskets; powdered sugar can be completely omitted, and I always add salt to the dough, although I often forget to mention it in the ingredients

Tell me, is it necessary to grease the molds with something before putting the dough out so that the dough doesn’t end up sticking and how to take out the cake after it’s cooked? Is it also possible to replace butter with margarine?

SUOK, hello, no, you don’t need to grease the mold, shortcrust pastry contains a lot of fat and it does not stick to the mold. It’s easy to get the cake, after the basket is baked, it becomes a little smaller than the mold and a gap is formed, just tilt the mold slightly and the cake will seem to slide out, and if you are worried that you can damage the meringue, then bake the baskets again without the molds. And yes, butter can be replaced with margarine

Thanks for the answer. Very beautiful and tasty. I really liked the meringue. This is something unusual. Only the baskets turned out to be hard, but I think it’s because of the margarine and maybe I messed up the proportions of everything else since I didn’t take 90G but a pack of 250.

I'm very glad you liked it. But the baskets could turn out to be a bit harsh for the reason that the shortbread dough may have been kneaded for a long time, it doesn’t like it, the less it is kneaded, the better it turns out.

Irina, hello! What size are your molds? And the output is 6 pieces?
