STEP 1

Let's prepare the ingredients according to the list. As a filling you can use cottage cheese, minced meat, apples, cherries, jam, cheese, mushrooms, sausage and other products to taste. These can be sweet pies or snack bars. I have curd salty filling. We remove the puff pastry from the freezer in advance and let it defrost under natural conditions (at room temperature), usually an hour is enough.
STEP 2

While the dough is defrosting, prepare the curd filling. Place cottage cheese in a bowl or blender bowl, add a spoonful of sour cream or cream to make the filling juicier and more tender, add salt to taste. Mix or grind the cottage cheese thoroughly, if it is grainy, so that the curd mass becomes homogeneous in consistency.
STEP 3

Place the dough layer on a floured work surface, roll it out a little with a rolling pin, but not very thin, otherwise the envelopes will not turn out flaky and airy. You can try to roll out both layers at once, sprinkle them with flour and place them on top of each other, you will get the top and bottom side of the pie at once, then all that remains is to cut the dough into squares, fill and seal the edges.
STEP 4

We cut the layer of puff pastry into squares or rectangles, as it turns out, identical in size. Place the curd filling in the center of each square of dough. We fasten the edges of the dough to make an envelope; you can use the tines of a fork to walk along the edge of the “envelope” to make it more beautiful.
STEP 5

Envelopes come in different shapes: square, rectangular or triangular, so you can safely give the pies any shape you like. it doesn't affect the taste. Place them in a greased baking dish. In a bowl, beat the yolk of a chicken egg. We grease the puff pastry pieces with it. If desired, you can sprinkle sesame seeds on top of the envelopes.
STEP 6

Preheat the oven to 180 degrees. Place the pieces in the oven for 15-20 minutes. You need to focus on the operation of your oven. The pies should brown well and rise. Remove the pies from the oven and serve with tea, coffee or milk. Bon appetit!
