Unrefined vegetable oil, flaxseed, olive or regular refined oil is suitable. I used olive oil in the recipe. Wash the potatoes thoroughly and boil until tender in lightly salted water.

    Wash the cucumber and dry it. Cut into small cubes. Grind lightly salted cucumbers in the same way. It is permissible to use pickled cucumbers for the salad.

This was such a delicious salad! The potatoes were soaked with all the juices, the dressing was just fire! I used olive oil infused with Italian herbs and garlic, plus chopped garlic, freshly squeezed lemon juice and homemade mustard. This is delicious! Parsley with dill is the final chord of aromas in this riot of flavors. The crispy homemade pickled cucumbers are especially piquant here. I recommend the potato, tomato, and cucumber salad, it’s great! Many thanks to the author!

Yes, a real country salad! Easy to prepare, delicious and very aromatic! It’s especially good to do it when the new potatoes have just begun, and everyone has already eaten a little of the cucumbers. The main thing here is to take the “right” sunflower oil. You can also season the salad with lemon juice, only fresh, from a lemon wedge directly into the plate. The taste immediately becomes interesting and refreshing - it is important not to overdo it!
