Potato, carrot, egg, onion salad - very fresh, truly spring, giving pleasant associations, which is especially true on a cold autumn day. It is prepared very simply from available products. What else captivated me is that there is no meat in it. I boiled potatoes, carrots and eggs, cooled them, and cut them into small cubes. I chose this cutting method because I planned to combine all the ingredients in a salad bowl with mayonnaise. Cucumber, onion, which I took instead of green, and finely chopped parsley. My cheese was hard, so I grated it. I combined everything, salted it, added mayonnaise. It turned out very tasty and juicy! The cucumber added not only freshness to the salad, but also a wonderful aroma. I’m thinking about making this salad again. Thank you very much for the recipe!
