Step-by-step preparation
STEP 1
How to roast pork like you would in a cafeteria? Prepare your food. Not all parts of the carcass are suitable for frying. To make the meat tender and juicy, use neck, shoulder, ham or tenderloin. The dish will be tastier from fresh meat, but if you have frozen meat, defrost it first, leaving it in the refrigerator for 8 hours, then 1-2 hours in the room.
STEP 2
Rinse the meat and dry it with paper towels so that when frying there is less splashing and a more uniform golden brown crust appears on the surface. Trim off excess fat.
STEP 3
Cut the meat into pieces approximately 2x4 cm in size. Try to cut the pieces across the grain - they will shrink when frying, but the short ones will be softer than the long ones.
STEP 4
Peel the onion, rinse and cut into half rings. In this form it will retain its shape and will be convenient to eat.
STEP 5
Place the meat and onions into a common deep container. Add spices and about 3 tablespoons of oil. Don't add salt yet. It is better not to salt the meat before frying in order to retain more juice. Take spices to taste, ready-made sets or individually.
STEP 6
Mix everything thoroughly so that each piece marinates evenly. Leave for 30 minutes at room temperature.
STEP 7
To fry, heat a frying pan with vegetable oil. Please note that if the meat is too fatty, you will need much less oil than indicated in the recipe. Sometimes, if the meat is fatty, you can do without oil at all. Turn the heat to medium or higher than medium. Since the meat takes longer to fry than the onions, place only the pork pieces in a single layer in the pan first. If everything does not fit at once, fry in several batches. There is no need to close the lid.
STEP 8
Place the pork in the pan, piece by piece, spaced apart. Fry on both sides until golden brown. It took me about 4 minutes on each side. Salt the already fried side.
STEP 9
Place the finished pieces in a deep bowl, cover with a lid and let “rest” until the meat is ready.
STEP 10
Fry the onion in the remaining oil from the meat in the frying pan. Fry until it becomes translucent and golden.
STEP 11
Before serving, stir the meat and onions and heat lightly in the same frying pan. Serve with mashed potatoes, pasta, rice or buckwheat. Bon appetit!
