Rice with dried fruits

STEP 1
How to make sweet rice with dried fruits? Prepare your food. My rice is steamed, but in general any variety will do. To measure the water, place the rice in a glass - you will need twice as much water. And to measure dried fruits, weigh the rice - you will need the same amount. In addition to those listed, you can take others - any dried fruits, figs, dates. Quince is also suitable for fresh fruits, and instead of carrots you can use pumpkin.
STEP 2
Rinse dried fruits well under warm running water, then dry thoroughly with paper towels. Cut the prunes into halves or leave whole if they are not large.
STEP 3
Cut the dried apricots into quarters. In general, the principle of cutting is this: the more the dried fruit is boiled, the larger it should be. Leave the raisins and cherries as is.
STEP 4
Peel the carrots and cut into small cubes.
STEP 5
Cut the apple into quarters, cut out the middle with the seeds. Cut it into cubes as well.
STEP 6
Do the same with the pear - cut it into cubes.
STEP 7
Heat a frying pan over medium heat, pour in vegetable oil for frying. Read about how to choose a frying pan and oil in separate articles, links at the end of the recipe. Place carrots in heated oil. If you are preparing pilaf with quince, then also add it at this stage. Fry the carrots for a few minutes until soft.
STEP 8
Add all the dried fruits and chopped fresh fruits to the carrots. Stir and fry for a couple of minutes.
STEP 9
Then add rice. If your rice is steamed, it will be immediately dry. If it’s regular, then rinse it first. Mix the rice with the fruit and fry everything together a little so that each grain of rice is coated with oil - then the pilaf will turn out crumbly.
STEP 10
Pour two glasses of hot water into the pan (use the same glass you used to measure the rice). Add salt. Reduce heat, cover the pan with a lid and leave the pilaf to cook until the water is completely absorbed, this will take 15-20 minutes, depending on the type of rice. STEP 11
Stir the finished dish and let it stand under the lid for another 10 minutes. Then serve the pilaf to the table.
