    Take round polished rice, the porridge will then be more viscous. Rinse the rice thoroughly, changing the water several times until it runs clear, to remove all the smallest traces of dust from the grain.

    Also rinse the dried apricots thoroughly under running water, then place them in a bowl and pour boiling water over them. Leave for 15 minutes so that the dried fruits steam well. Drain the water, dry the dried apricots with paper towels and cut into small pieces.

    Place the rice in a saucepan and cover with hot water. Put it on fire. The main thing is to choose the right proportions of rice and liquid so that the porridge turns out viscous and the rice is well boiled. For a glass of rice, take 2 glasses of water and 1.5 glasses of milk. When the water boils, add salt to taste. Stir. Reduce heat to low and simmer the porridge, covering the pan with a lid, for about 20 minutes. During this time, almost all the liquid should evaporate.

    Pour in the milk, stir and cook for about 5 minutes.

    Then add dried apricots and sugar to the pan with porridge. You can adjust the amount of sugar to your taste. Stir and keep the porridge on the fire for another 5 minutes. Then turn off the fire.

    Add a knob of butter to the pan with the rice. Cover the pan with a lid, wrap it in a warm towel and leave for 15 minutes “under a fur coat”.

My daughter asked me to cook rice porridge. But I wanted to not just cook it, but somehow diversify it. On the website I found a recipe for rice porridge with dried apricots. My daughter doesn’t like dried apricots because of the sourness. So I suggested that she add candied pineapple to the porridge. I cooked the porridge according to the recipe. I liked steaming the rice in water first and then adding the milk. The porridge turned out more tender and tastier. I didn’t wrap the pan, I just kept it under a closed lid. The candied fruits also steamed and gave their sweetness to the rice. The porridge turned out thick. If you don't eat it right away, it will become even thicker. Therefore, if you cook porridge for later, it is advisable to take more liquid.
