I wanted fresh homemade bread, so I decided to bake bread from rice flour in the oven. I didn’t take any risks and added more wheat flour and less rice flour. The dough turned out light and slightly unruly, so I made a random shape of bread. When the finished bread cooled down, it turned out to be very easy to cut, it almost didn’t crumble 🙂The whole family ate it with pleasure, making sandwiches with butter for tea. I recommend the recipe!

I am treating three friends, one of whom criticizes the fact that I am using rice flour in production. Well, “the teeth are like rubber,” you say about such baked goods, but why, excuse me, did you then eat most of it with genuine appetite and call the bread the best of all that I have cooked? By the way, after preparing the dough, I mixed both types of flour thoroughly, and then I did not encounter any questions about “wet layers” (no offense to this recipe, perhaps I did something wrong earlier). So, the bread browns quickly, expands greatly in the oven (but does not crack), and hardens in air for a longer time than white wheat bread. The taste is delicate, it is not loaded with baked goods, but at the same time it does not seem simple - due to the addition of rice flour, specific taste properties appear. In general, the photo report is minimalistic and simple, but the taste is not.

I made the batch in a bread machine and adjusted it by adding rice flour. The bread turned out good - soft, porous, easy to cut into thin slices, tasty, if you don’t know that it’s baked not only from wheat flour, then it’s hard to guess. Thank you Anna for the recipe.

Anna, I’m very interested in bread made from rice flour. But it’s somehow scary... I only had one experience of making a classic French baguette. It turned out fantastic, crispy on the outside and soft on the inside. But everything was clear there, because you have a great idea of ​​what a real baguette should be like. And this bread???
