Absolutely any cheese will do - hard, soft, the main thing is that it is of high quality and natural. I took maasdam and suluguni, puff pastries with cheese or feta are very tasty. For soft cheeses, simply mash them with a fork.

But I liked the triangles better. Make puff pastries from the second layer in the same way. Cover a baking sheet with parchment and place the pieces on it.

And today I have puff pastry made from yeast-free puff pastry with cheese thanks to the katushafin recipe. While the dough was defrosting, I prepared the filling. I grated the cheese on a coarse grater, added an egg, and mixed. I rolled out the dough lightly and cut it into squares. I laid out the filling, folded it into a triangle, pinched the edges, pressed with a fork. I brushed it with beaten yolk, sprinkled it with sesame seeds and put it in the oven to bake at 200° for 30 minutes. Simple, quick and very tasty!
