STEP 1
How to quite simply prepare the most delicate “Prague” cake from three sponge cake layers with two layers of cream in chocolate glaze, which many will definitely like for its wonderful taste? First of all, we prepare the necessary products for preparing a classic cake in accordance with GOST.
STEP 2
To prepare biscuit dough, take a large bowl and break six chicken eggs into it, then add a pinch of salt to the bowl and beat the eggs with a mixer at low speed, then pour one hundred and fifty grams of sugar into the bowl in two or three steps.
STEP 3
Continue beating the eggs and sugar at high mixer speed for ten minutes until a fluffy white mass forms.
STEP 4
Take a small bowl and pour into it one hundred and ten grams of premium wheat flour, one teaspoon of starch, twenty-five grams of cocoa powder and mix all the ingredients well, then take a fine sieve and sift the resulting mixture into a bowl with the egg mixture.
STEP 5
Mix the dough very carefully with a spatula from bottom to top and keep it fluffy, then add thirty grams of softened butter to the dough and continue to mix all the ingredients together with a spatula from bottom to top.
STEP 6
Take a mold of a suitable diameter and cover the bottom with parchment, then grease the sides of the mold with a small amount of butter and place the prepared dough into it.
STEP 7
Place the mold with the dough in an oven preheated to one hundred and seventy-five degrees and bake the sponge cake at an oven level below average for forty to forty-five minutes, after which the slightly cooled sponge cake is released from the mold and cut into three even cake layers.
STEP 8
To prepare the cream, place one egg yolk in a saucepan, then pour twenty-five milliliters of boiled water into it and stir with a whisk, then add one hundred and fifty grams of condensed milk into the saucepan and mix all the ingredients well with a whisk until smooth.
STEP 9
To prepare the custard, place the saucepan on the stove, then stir constantly and simmer the milk until thickened over medium heat on the stove.
STEP 10
Take a fine sieve and sift twenty grams of cocoa powder into a saucepan, then mix all the ingredients together with a whisk until you get a chocolate base, which you then cool.
STEP 11
Place two hundred grams of softened butter in a deep bowl and beat it with a mixer, then add the chocolate base to the bowl and continue to beat with the mixer until a homogeneous cream is obtained.
STEP 12
To prevent the cake from turning out dry, generously soak the cakes with apricot syrup from jam diluted with warm boiled water.
STEP 13
Start assembling the cake and spread the prepared chocolate cream onto the first cake layer in an even layer.
STEP 14
Place the middle cake layer on top and evenly distribute the second layer of cream on it, then cover it with the third layer of cake and evenly distribute the remaining cream on the sides of the cake, which then put in the refrigerator for twenty minutes.
STEP 15
To prepare the glaze, place one hundred and fifty grams of dark chocolate, seventy-five grams of butter in a saucepan and place it on the stove, then stir and melt the chocolate over low heat on the stove, then cool it completely.
STEP 16
After time, grease the top and sides of the cake with apricot jam made from jam, then put the cake in the refrigerator for twenty minutes.
STEP 17
As time passes, spread the cooled glaze in an even layer on the sides of the cake and pour any remaining glaze on top of the cake, then spread the glaze in an even layer.
STEP 18
