STEP 1

How to fry potato pies in a frying pan? First of all, boil the potatoes. How to cook potatoes? Wash, peel and cut the potatoes into small pieces so that they cook faster. Place the potatoes in a saucepan and add enough cold water to barely cover the contents of the saucepan. Place the pan on the fire.
STEP 2

When the water boils, reduce the heat to medium, add a little salt to the water and cook the potatoes for about half an hour until fully cooked. Cooking time depends on the type of potato and the size of its pieces. You can check the readiness with the tip of a knife or fork; they should easily fit into the pieces. Pour the broth from the pan with potatoes into a separate container; you do not need to pour it out immediately.
STEP 3

Mash the potatoes with a hand masher, adding broth if necessary. Add a piece of butter, stir. The mashed potatoes should be plastic and soft, not dry and not too liquid; I used about half of the broth. Let the mashed potatoes cool slightly, taste them for salt, add salt if necessary and add a little ground black pepper.
STEP 4

Beat a chicken egg into the puree, mix, add wheat flour, mix again. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 5

You should get a sticky, dense dough.
STEP 6

Pour wheat flour into a plate. Take the potato dough with a tablespoon, place it in flour on a plate, roll flour on all sides and shape into pies. At this stage you can put any filling inside.
STEP 7

Heat vegetable oil in a thick-bottomed frying pan. Place the pies into the heated oil and keep them on high heat for a couple of minutes. Then reduce the heat to medium and fry the pies for a couple more minutes, they should become golden brown. Then turn them over and fry on the other side until golden brown.
STEP 8

Cover the frying pan with a lid and keep the pies in the pan for about 5 minutes so that they are well cooked inside. Remove the finished pies from the pan onto a plate lined with paper napkins to absorb excess oil. Then place the pies on another plate and serve. They are very tasty warm with sour cream and herbs.
