STEP 1
How to make potato bread in and without a bread machine? Prepare the necessary ingredients. You can specially boil potatoes in advance for this bread (you will need 2 medium tubers) or take ready-made ones, which, for example, were left over from dinner. But do not forget to save the potato broth when cooking - it also plays an important role here.
STEP 2
If your bread machine is large and is designed for 4-5 glasses of flour, feel free to increase the proportions - after all, it’s a pleasure to do this on the website - the program itself will recalculate everything for us! Be sure to sift the flour and mix with dry yeast
STEP 3
Turn the potatoes into mashed potatoes in any convenient way, but I’m used to doing this using a masher. At first I wanted to take ready-made mashed potatoes for this recipe, but then I changed my mind, deciding that everyone’s mashed potatoes are different in thickness - I like it liquid, while some like it thick... But for the dough, the ratio of dry and liquid ingredients is very important, it cannot be determined approximately

Beat the egg into the puree

Add sugar and salt. If you have potatoes that have been cooked for eating, reduce the amount of salt by about half, since they are probably already salty.

Mix everything well until smooth.

Add vegetable oil and potato broth, mix well again.
STEP 8
Now mix dry and liquid ingredients.
STEP 9
Happy owners of bread machines can simply load everything into the bucket in the required sequence, which is indicated in the instructions for the bread machine - for me it’s first bulk ingredients, then liquid ingredients
STEP 10
Turn on the “Bread” program and the bread maker will do everything for you: it will knead and knead in 30 minutes, and let the dough rise, and finally, at the right moment, bake our wonderful bread. This program takes me 3 hours.
STEP 11
This is such a beautiful, smooth, even bun that comes out after kneading. We leave the bread machine to work, especially since it is not recommended to look often when the program is running).
STEP 12
Well, for those who are not yet familiar with this wonderful technique, I will tell you how to do everything with our golden hands, that’s why we have them golden, right? Knead the dough with a spoon and then with your hands.
STEP 13
Knead the dough well for 10-15 minutes. I have to say that the mashed potato batter is quite sticky, so try to get used to it! You can add a little flour, but I don’t advise you to get carried away, otherwise the dough risks getting “clogged.”
STEP 14
Grease the bowl with vegetable oil so that when the dough rises it does not stick to the bowl. Place in a warm place for 1 hour and 20 minutes. Today I chose the microwave as a warm place (this method is suitable for a small amount of dough, like ours). To do this, place the dough in the microwave along with a glass of boiling water. In this case, there is no need to cover the dough, because the microwave is closed and the water will gradually evaporate
STEP 15
After the specified time, the dough increased 2-3 times (I didn’t even expect it)!
STEP 16
Knead the dough again and stretch or roll into a flat cake.
STEP 17
Fold over edges and seal.
STEP 18
We get this kind of envelope.

Place the dough in a mold greased with a small amount of vegetable oil (I have a mold 30x13x5.5 cm).
STEP 20
Leave the dough to rise in a warm place for another 1 hour (now it is better to cover with a towel). Our dough has doubled in size again.
STEP 21
Then place the bread in an oven preheated to 180 degrees and bake for about 30 minutes, depending on the characteristics of your oven, until golden brown.
STEP 22
This is how we got such a ruddy, fluffy loaf of bread! And the aroma of fresh baked goods just drives you crazy!

The bread turned out to be very light, airy, does not go stale for several days, the texture is reminiscent of toast bread, but much tastier, because we make it homemade! Bon appetit!
