Posikunchiki

Delicious thin dough pies with juicy meat filling! Posikunchiki are small Ural pies with a thin dough and juicy meat filling. When you bite into the pie, the juice flows out, which is where they got their name. Our region is the birthplace of these pies, so they are very popular here.

  1. STEP 1

    STEP 1

Let's prepare the ingredients according to the list. Let's start by preparing the dough. Beat a chicken egg into a deep bowl, add sour cream and pour in cold, clean water. Add salt and mix the ingredients with a whisk until a homogeneous mixture is obtained.

  2. STEP 2

    STEP 2

We sift the wheat flour to remove foreign bodies and lint that may be in this product, and also to saturate the flour with oxygen. Pour the sifted flour into the bowl with the liquid mixture. You don’t need to add all the flour at once; add it in parts so as not to clog the dough.

  3. STEP 3

    STEP 3

Continue kneading on the table, sprinkled with flour, with your hands. Knead into a smooth elastic dough. Leave it in a bowl, covered with a towel or cling film, to rest for half an hour at room temperature.

  4. STEP 4

    STEP 4

In the meantime, prepare the filling for the pies. You can use ready-made minced meat or make it yourself from fresh meat. You can use any meat you wish; it will be tastier from mixed minced pork and beef. Add finely chopped onions, salt and ground black pepper to a bowl with minced meat, pour in cold water. Mix the ingredients until smooth.

  5. STEP 5

    STEP 5

On a work surface sprinkled with flour, roll the rested dough into a thin sausage, cut it into several small pieces, the pies should be small in size, like dumplings, roll into thin flat cakes.

  6. STEP 6

    STEP 6

Place a tablespoon of meat filling in the center of each dough ball. We fasten the edges of the dough well so that the juice from the filling does not leak out during frying, and form the pies.

  7. STEP 7

    STEP 7

Pour vegetable oil into the frying pan. Let's warm it up. Place the pies on the heated oil. Fry them on one side over medium heat for 5 minutes until golden brown.

  8. STEP 8

    STEP 8

Then turn the pies over and fry on the second side until golden brown. To ensure that the filling in the pies is better fried, you can cover the frying pan with a lid and keep the pies on the fire for a couple more minutes. Remove the pies from the frying pan and serve with tea, coffee or cocoa. Bon appetit!

High in calories, but tasty! Reminded me of the recipe for these pies. Yeast-free dough and minced meat filling.

Loved this posikunchiki recipe! I slightly changed the composition of the dough, kneading it simply with water (without sour cream). And I usually fry such little ones not in a frying pan, but in a cauldron or a small ladle. In my opinion, this reduces oil consumption. Otherwise I recommend it!

That's right, miniature pasties. But there is more minced meat in them than in store-bought chebureks, in which a piece of minced meat can only be seen in the light. You will also be delighted with the taste!

I have no doubt that it is very tasty. And to be honest, I generally bypass store-bought chebureks, they don’t inspire confidence in me, it’s better to spend a little time and cook it yourself))) otherwise you never know what kind of meat is in the store-bought chebureks))
