Plum jam with cocoa
Ingredients
Step-by-step preparation
STEP 1
How to make plum jam with cocoa? Prepare all the necessary ingredients. For jam, take hard, ripe plums; the best varieties are ones that have a good pit.
STEP 2
Sort through the plums, remove debris, as well as dented and damaged specimens. Next, wash them well under running water and place in a colander to drain all the water. Then the plums need to be dried. To do this, place them on a laid out towel and blot with another.
STEP 3
Remove the pits from the plums. Place all the slices in a bowl in which the jam will be cooked. Remember that jam cannot be cooked in aluminum containers, as this metal will release harmful chemical compounds into it. Weigh the resulting workpiece. This is necessary to calculate the required amount of sugar. It should be half as much.
STEP 4
Next, measure half of the total amount of sugar and pour it over the plum. Leave the fruits for several hours to release the juice.
STEP 5
The sugar should completely dissolve; you can help it by stirring the mixture from time to time. That's how much juice came out of my plums.
STEP 6
Put our basin on the fire and let's start cooking. It is not necessary to make the fire high, it is better to make it medium heat, otherwise the jam may burn.
STEP 7
Bring the plums to a boil.
STEP 8
While the plums are boiling, add cocoa and vanilla sugar to the remaining sugar. Stir. Vanilla sugar can be replaced with vanillin. Take it on the tip of a knife; in larger quantities it can add bitterness to the finished dish.
STEP 9
Pour the remaining sugar and cocoa into the boiled jam. Mix well.
STEP 10
Reduce heat and simmer jam for 40 minutes. stirring all the time and skimming the foam from the surface. Make sure that the jam does not burn! The foam must be removed, otherwise the presence of foam in the jam will affect the color, taste and storage period of the workpiece. Sterilize the jars. Wash them with baking soda and place them, damp, upside down on a cold oven rack. Preheat the oven to 150 degrees and sterilize 0.5 liter jars. - 10 min. Boil the lids
STEP 11
Pour the hot prepared jam into prepared jars and close the lids. Turn the jars over and wrap them in a blanket or blanket. Leave it like this until it cools completely. Store the finished jam in a cool place. Bon appetit!
