But it can be replaced with any other refined oil. Do not throw away the mozzarella brine - it can replace the water for the dough.

    Start making pizza with dough. Heat the water to a temperature of 37-40 degrees. (I replaced some of the water with mozzarella brine, it makes the dough tastier). Dissolve sugar in it and add yeast. If you don’t have a cooking thermometer, determine the temperature in the following way: place a drop of water on the inside of your wrist. If the feeling is neutral, then the temperature is correct. Leave in a warm place for 5-15 minutes to activate the yeast.

    Add salt, 2 tablespoons of vegetable oil to the dough and stir well until smooth. The properties of flour of the same type, but from different manufacturers may differ. Therefore, to get the desired consistency, add flour in small portions. When it becomes difficult to knead with a spoon, start doing it with your hands. Knead the dough thoroughly.

    Grease the bowl and hands with vegetable oil. Form the dough into a ball, cover the bowl with cling film or a towel so that it does not dry out and rises well. Leave in a warm place for about 2 hours. The time depends on the properties of the yeast and the conditions in which the dough will be placed.

    Prepare the filling. Remove limp leaves and hard stems from the basil, wash, dry and chop with a knife. Peel and wash the garlic, cut along the clove into 2 parts.

    Heat vegetable oil in a hot frying pan. Cook garlic over medium heat for 2 minutes, stirring.

    Add tomato paste to the garlic. If the paste is too thick, add a little water so that you can get a smooth paste. Stirring constantly, bring to a boil, add basil and half the dried herbs. Simmer for another 2 minutes.

    Transfer the resulting paste into a small container and cool. Remove the garlic, you will no longer need it.

    Cut the mozzarella into 8 equal pieces.

    When the dough has increased by 1.5-2 times, you can proceed to forming the pizza. Turn on the oven to preheat to 180 degrees so that it has time to warm up.

    Divide the dough into 8 equal pieces. Roll them into balls. Place on a horizontal work surface dusted with flour.

    Form pizzas. Make pizzas by greasing your hands with oil or dusting them with flour. Roll out the dough into a round layer with a diameter of 5-6 cm. Place a teaspoon of tomato paste in the middle and mozzarella on top.

    Lift the edges of the dough and pinch them together. The dough should not be too stretched, otherwise when it is baked, it may burst and the filling will leak out. I missed it and several of my pizzas burst.

    Place the finished pizzas, seam side down, at a distance from each other, on a baking sheet covered with non-stick parchment. Brush the tops of the pizzas with milk and place them on the middle shelf of the oven. The exact cooking time depends on the capabilities of your oven. For me they baked in 12 minutes at a temperature of 180 degrees on the top-bottom mode with convection. Mix melted butter, remaining vegetable oil and aromatic herbs. Brush the top of the pizzas with this mixture.
