This rice does not overcook. You can use any part of the chicken for pilaf. I will cook pilaf on chicken thighs.

    Cut the chicken into small pieces. Pour a little vegetable oil into a hot frying pan and place the chicken. Fry it over high heat on all sides until golden brown.

    Finely chop the onion. Grate the carrots on a coarse grater. Fry the chopped vegetables in a hot frying pan with the addition of a small amount of vegetable oil. Fry them for 3-5 minutes over medium heat.

    Place fried chicken and roasted vegetables in prepared baking dish. For baking, take a deep form, as the rice will increase in volume during cooking. The mold can be ceramic, glass or metal. There is no need to pre-grease the mold with oil, since there is already enough oil in the fried chicken and vegetables.

    Rinse the rice well several times in cold water. The water after washing should remain clear. Drain all the water from the rice.

    Spread the washed rice over the entire pan in an even layer. Add a few cloves of garlic. Add a little salt and spices to taste. As a spice, you can take a ready-made pilaf kit. All the spices in it are harmoniously selected.

    Fill everything with hot water. Why hot? This is necessary to ensure that there is no sudden temperature change in the hot chicken. Otherwise the meat may become tough. And in hot water, the process of cooking pilaf will begin faster. Cover the pan with foil and place in the oven, preheated to 180 degrees, for 40 minutes. You can remove the foil 10-15 minutes before the end of cooking.

My husband and I love pilaf very much, so when we saw a recipe for pilaf in the oven with chicken on the website, I started cooking it. I took a chicken breast, cut it up, and fried it in vegetable oil until golden brown. Then I added onions and carrots to the pan and fried everything together for 5 minutes. Then I placed the meat and vegetables on a baking sheet. On top I put washed rice (I had short-grain rice), garlic, salt, poured hot water over everything and put the baking sheet in the oven. My baking tray is small with low sides, so it was not possible to completely cover the rice with water. I had to add water during cooking. The rice absorbed it and steamed well, becoming soft and crumbly. It turned out delicious! We ate pilaf with pleasure! Thank you very much for the recipe!

I also cook according to a similar recipe, but sometimes instead of chicken fillet I put either pork or beef, depending on what is available. The plo turns out very tasty and satisfying, but I just can’t make it crumbly.
