STEP 1
How to make stewed pike perch with carrots and onions? Prepare all the necessary ingredients. It’s more convenient to take the fillet right away. If you have a whole carcass of pike perch, then clean it, remove the head and gut it. Remove the fillet and leave the skin on. This will allow the pieces to retain their shape and look presentable in the finished dish. There are practically no bones in pike perch, so once you remove the backbone, you don't have to worry about it anymore.
STEP 2
Cut the fillet into portions, add salt and pepper. Pour flour into a plate and roll fish pieces on all sides.
STEP 3
Heat vegetable oil in a thick-bottomed frying pan and fry the pike perch pieces on each side until golden brown. Place on a plate and leave for a while.
STEP 4
Wash the vegetables. Peel the carrots and grate on a coarse grater. Cut the onion into rings. Remove the seeds from the bell pepper and cut into half rings.
STEP 5
Add a little more vegetable oil to the pan and add the vegetables. Fry over moderate heat for 10 minutes, stirring occasionally. During this time, the onions and carrots will become soft and change color slightly.
STEP 6
Place chopped bell peppers in a frying pan, pour in water, add tomato paste and mix everything. Bring to a boil.
STEP 7
As soon as the mixture boils, add salt, ground pepper and place the fish on top. Reduce heat to low, cover and simmer for 5 minutes. After the first frying, the pike perch is already completely prepared; it needs to be stewed with vegetables in order to be saturated with the flavor and juice from the vegetables and soften a little. You should not increase the stewing time, otherwise there is a high risk of the fish falling apart and the dish losing its restaurant appearance.
STEP 8
Serve the pike perch pieces hot. First, place a layer of vegetable bed, top with one or more pieces of aromatic white fish and serve with green onions for decoration and variety of taste. You can serve the fish on its own or with any side dish to your taste. Bon appetit!
