    Add salt and 2/3 vegetable oil to the dough. The remaining oil will be useful for greasing your hands and bowl (step 6). Stir well until the salt dissolves.

    Sift the flour. This is necessary to remove small debris, if any, and to saturate the dough with oxygen so that it rises well.

    Add half the flour to the liquid part of the dough and start mixing with a spoon. The properties of flour of the same type, but from different manufacturers, may differ. Therefore, to get the desired consistency, add the remaining flour in small portions. When it becomes difficult to knead with a spoon, start doing it with your hands.

    Knead the dough thoroughly. It should turn out soft, very tender and slightly stick to your hands. Grease the bowl and hands with vegetable oil. Form the dough into a ball, cover the bowl with cling film or a towel so that it does not dry out and rises well. Leave in a warm place for about 2 hours. The time depends on the properties of the yeast and the conditions in which the dough will be placed.

    While the dough is rising, make the potato filling. Peel the potatoes and remove dirt and rinse well. Cut into small pieces of approximately the same size so that all the potatoes cook at the same time and quickly. Boil it until done. This will take approximately 20-30 minutes depending on the capabilities of your stove and the type of potato. No need to add salt.

    Peel the onion, rinse and cut into small cubes. Place in a frying pan and fry over medium heat for 3-4 minutes.

    Fry until the onion turns slightly golden.

    Drain all the water from the cooked potatoes. Add fried onions, salt and pepper. Make mashed potatoes using a potato masher while the potatoes are still hot. It is better not to make puree with a blender, as it turns out heavy and very sticky. It will be difficult to work with him.

    Wash the egg well, wipe dry with a towel and separate the white from the yolk. Leave the yolk for now, it will be useful for greasing the pies (step 18).

    Transfer the filling from the pan to a bowl to help it cool faster. Add the protein and mix thoroughly. Fill the pies only when the filling has cooled, otherwise you may ruin the dough.

    Separate 12 identical pieces from the dough and roll them into balls. Place on a horizontal work surface dusted with flour. Turn the oven on to 200 degrees so that it has time to warm up.

    Form the pies. Make pies by greasing your hands with butter or dusting them with flour. Roll out the dough into a round layer 0.4-0.5 cm thick. Place an oblong shaped filling in the middle.

    Place the pies, seam side down, on a greased baking sheet at a distance from each other. The baking sheet can be covered with parchment. If the parchment is not non-stick, grease it with oil to prevent the pies from sticking to the surface.

    Brush the top of the pies with a mixture of yolk and sour cream and place the baking sheet in the oven. Bake for 20 minutes on the top-bottom setting. The finished pies will increase in volume and acquire a golden color.

Hooray! I got the same beautiful pies as in the photo! They are so ruddy and golden, you just can’t take your eyes off them) And what I noticed is that this time the filling did not come out of any of the pie. I just usually start leaking. I'm very pleased with the result! The pies were easy to put together, the dough rose perfectly and kneaded without any problems. I added a little milk to the filling, otherwise it turned out too thick in my opinion. The baked dough is tasty, airy, for some reason the dough with the addition of eggs does not turn out so fluffy. The filling is also delicious, tender, I especially like the taste of fried onions. Thank you for the very successful recipe for yeast pies with potatoes in the oven!

The first time I cooked strictly according to the recipe, not counting the greasing of the pies (there was no sour cream, I replaced it with milk) The dough turned out very airy, I’ve never seen anything like it. The result looks appetizing, I haven’t tested the taste yet) I also added a little milk to the potatoes, it seemed too dry
