STEP 1
How to make egg pies? Prepare the food, it should be at room temperature. Prepare the dough. Add yeast, a tablespoon of sugar and flour to warm milk (no more than 40 degrees). Mix everything, cover and put in a warm place. A foam cap will appear on the surface. This means that the yeast is active and can be worked with. If there is no cap, then you need to use other yeast. STEP 2
Melt the butter in a water bath. In a deep bowl, mix the dough, salt, sugar, egg and mix well. Then add 250 grams of flour and mix. Pour in melted butter, vegetable oil and knead the dough. It doesn’t turn out cool, it sticks to your hands, but don’t add extra flour yet. You may need a little less or more flour. Cover with a towel or cling film sprinkled with water and place the dough in a warm place.
STEP 3
The dough should increase 2-3 times. After it has increased, it must be brought down and allowed to rise again. Repeat this procedure 2 times, adding a little flour. The dough should already be soft and pliable, practically not sticking to your hands.
STEP 4
To prepare the filling, you need to first boil and cool the eggs. Peel the eggs and cut into small cubes. Wash the green onions thoroughly and chop them into small pieces. In a deep bowl, mix the chopped eggs and green onions, add a pinch of salt and stir. Add salt if necessary.
STEP 5
Knead the risen dough and divide it into koloboks (my koloboks weigh 55 grams, but it’s better to make them smaller). Cover the workpieces with a towel each time to prevent them from getting chapped.
STEP 6
Roll each bun into a round cake, place the filling in the middle and pinch the edges so that the filling does not fall out. So prepare all the pies.
STEP 7
Heat vegetable oil in a frying pan, turn the heat to below medium. Place the prepared pies in a frying pan and fry first on one side, then on the other until golden brown. You can use a lid. STEP 8
Serve the finished pies with onions and eggs either warm or cooled.
