STEP 1
How to fry pies with cottage cheese and onions in a frying pan? Prepare all the necessary ingredients. Sift the flour through a strainer into a deep bowl, add instant yeast, which does not require pre-soaking. Lately I've only been using these - the baked goods come out fluffy. STEP 2
In a separate large deep bowl intended for kneading dough, beat an egg at room temperature (to do this, you need to remove it from the refrigerator in advance). Add salt, sugar and whisk everything.
STEP 3
Pour refined vegetable oil and warm milk, heated on the stove to 35 degrees, into the egg mixture. I used store-bought milk with a fat content of 2.5 percent. Mix everything with a whisk.
STEP 4
Start adding the flour mixture in small portions, while stirring everything with a spoon. When the mass comes together into a ball, transfer it to the work table. STEP 5
If necessary, the table can be dusted with flour, but only if the dough is very sticky. Knead the dough as usual, folding the edges towards the middle with good pressure, for 10 minutes. Roll the dough into a ball, place in a bowl, cover with film and leave in a warm place for 1 hour to rise. I usually turn on the burner in the kitchen while the dough is coming up. You can knead it additionally after 5-10 minutes when it becomes more elastic.
STEP 6
How to make filling for pies? Place the cottage cheese in a deep bowl. I used cottage cheese with a fat content of 9%. Add salt to taste, beat in the egg and add the washed chopped green onions. You can also use fresh dill as greens. Stir everything with a fork until smooth. The filling is ready. You will learn all the subtleties of choosing cottage cheese from the article at the end of this recipe. Large cottage cheese should be rubbed through a sieve or punched with a blender. This way the filling will be more tender.
STEP 7
When the allotted time for the dough has passed and it has increased in volume, we begin to sculpt the pies. Punch down the dough, roll it into a round sausage and divide it with a knife into 12 equal parts - you will get medium-sized pies. Set these rounds aside and sprinkle with a little flour.
STEP 8
Take one piece, knead it with your hands into a cake, not too thin (so that the filling does not leak out and tear the pie). Place a tablespoon of filling in the middle and seal the edges tightly, forming an oblong pie. Do this with all the preparations.
STEP 9
Pour enough oil into the frying pan so that it reaches half of the pies, heat it on the stove and fry the pies in several batches on both sides until golden brown over medium heat.
