Pickled pumpkin as a side dish for meat
An excellent addition to pork knuckle, for example!
Step-by-step preparation
STEP 1

Peel the pumpkin and cut into cubes.
STEP 2

Place in a saucepan, add water with 30% vinegar and sugar diluted in it. I added a lot of vinegar, 4 tablespoons, it turned out a bit harsh. Leave to marinate overnight. My night was long, about 12 hours.
STEP 3

I put all the spices in cheesecloth, put them in the marinade, and cooked after boiling for 10 minutes. Turn off the heat and let it steep for another half hour. I couldn’t find any cinnamon sticks in the store, so I added half a teaspoon of ground cinnamon.
STEP 4

Remove the spices and place the pumpkin in jars. I got something like this) maybe if the peppercorns and cloves were visible, it would have been prettier) It’s a housewife’s business.

Elenka, thank you for the interesting recipe! Last year I made pickled quince, it turned out well. This is the first time I’ve heard about pickled pumpkin, I need to try it. For some reason I haven’t learned how to store pumpkin correctly, it spoils when cut... I think this would be the best option. We also don’t have cinnamon sticks in the store right now; we’ll have to add ground cinnamon. Tell me, how do you use pickled pumpkin? Does it turn out very spicy?

I also pickled pumpkin, but I immediately pour the marinade over it and cook it. Keeping it in the refrigerator overnight is unnecessary.
