  1. STEP 1

    STEP 1

How to pickle garlic and beets? Prepare all the necessary ingredients. Take garlic heads of approximately the same size; it is better to take small ones so that they can be placed in the jar as neatly as possible. Use medium-sized beets. From the specified amount of products I got one jar with a volume of 0.6 liters.

  2. STEP 2

    STEP 2

Peel each head of garlic from the top layer of peel.

  3. STEP 3

    STEP 3

Boil water in a small saucepan. Place the garlic in boiling water and blanch for 1-2 minutes. Then drain the water and immediately immerse the garlic in cold water to cool it.

  4. STEP 4

    STEP 4

Peel the beets and cut into rings about 0.5 centimeters thick. Since I used a small jar, I cut each beet slice into half circles. This makes it easier to compact the vegetable into a jar.

  5. STEP 5

    STEP 5

Wash the jar well in advance with the product and rinse several times in clean water. Wash the lid with which you will seal the jar and pour boiling water over it. Place several slices of beets on the bottom of the container, then add the heads of garlic, filling the jar to the top. Place the remaining beet pieces in between the garlic. If desired, you can add a dill umbrella and hot chili pepper to the jar.

  6. STEP 6

    STEP 6

Prepare the marinade. To do this, add salt, sugar, peppercorns, cloves and bay leaves to the water. Place the pan over high heat; after boiling, reduce the heat to moderate and simmer the marinade for about two minutes. Finally, pour in the vinegar.

  7. STEP 7

    STEP 7

Pour the boiling marinade over the garlic and beets.

  8. STEP 8

    STEP 8

Close the jar with a lid, turn it over and wrap it with a towel. Leave at room temperature until completely cooled. Then put the jar in the refrigerator on the bottom shelf.

  9. STEP 9

    STEP 9

The garlic will be ready in 2-3 weeks.

I pickle garlic for the winter like this (watch the video), but next time I’ll definitely try to seal the garlic with beets. Interesting recipe, thanks!

I’ve never tried pickling garlic with beets, but I decided to experiment). Moreover, my daughter really loves pickled garlic. And this one will not only be tasty, but also beautiful! I'll serve it with meat for the holiday. I chose a 700 ml jar. First, I put small heads of garlic in it with a reserve for beets (for trying on). Then I sterilized the jar and lid, and peeled and washed the garlic. Then I laid out the garlic and beets in rows. 500 ml. I had just enough brine, I just poured it twice just in case, with an interval of 10 minutes. After seaming, I turned the jar over and wrapped it up with other preparations, so it was warmer). After cooling, I put the jar of pink garlic in the refrigerator for further marinating. Let's wait for you to be ready! Thanks for the recipe!
