Step-by-step preparation
STEP 1

How to make bell peppers in tomato juice for the winter? First, prepare all the necessary ingredients according to the list. Choose tomatoes that are red and ripe. Sterilize jars and lids in advance. For information on how to do this, as well as other subtleties of preservation, read the articles about preparations, links at the end of the recipe. Also prepare your work surface: wash the table and boards, preferably with baking soda. Wash your hands with soap.
STEP 2

Rinse all the tomatoes well and cut them randomly into pieces so that they can be easily chopped.
STEP 3

Make tomato puree from a blender or using a meat grinder.
STEP 4

Using a sieve, grind the puree, you will get pure tomato juice.
STEP 5

Place the tomato juice to simmer in a saucepan on the stove, be sure to stir it and skim off the foam. Cook for about 20-30 minutes. The article on saucepans, link at the end of the recipe, will help you choose the ideal pan.
STEP 6

Wash the bell pepper, remove the core and stalks. Cut into medium pieces.
STEP 7

Peel and rinse the garlic, cut into small pieces, add along with the bell pepper to the tomato juice. Cook for about 25 minutes, add vegetable oil, salt, sugar and black pepper to taste. 5 minutes before the end of cooking, add vinegar to the pan.
STEP 8

Place the peppers and tomato juice in sterile jars. First, fill only the bottom of the jar, let the jar warm up a little so that it does not burst due to a sudden temperature change.
STEP 9

Then fill the jars to the top.
STEP 10

Screw the lids on the jars with the workpiece.
STEP 11

Turn the jars of bell peppers in tomato juice upside down and cover with something warm, leave for 1-2 days until completely cooled, then put them in a cool place for storage. Bon appetit and happy cooking!
