Pear pie with cream and almonds

An amazing pie with a delicate creamy pear filling. I have been meaning to make this pie for a very long time. One look at the composition of the ingredients allows you to guess what deliciousness you will end up with. It is better to use pears that are not very hard, so that the filling is juicy and the fruit is well baked. When baked, the creamy filling turns into a dense custard. Combined with a slightly crispy dough, the result is a wonderful and tasty pie.

    Roll out the dough into a circle equal in diameter to the diameter of the baking dish, but not very thin.

    Cut strips from the remaining dough to decorate the sides.

    Place the dough in a parchment-lined baking pan. Form edges on the sides using strips of dough.

    Filling. For filling we will need: cream, egg yolks, almonds and sugar.

    First, pour boiling water over the almonds and leave for 3 minutes. Then peel off the skin. Grind the nuts in a food processor or coffee grinder into fine crumbs.

    Beat the cream with sugar into a fluffy dense mass. You can also add 1 tbsp. l. vanilla sugar.

    Add yolks to cream.

    Add ground almonds to the cream.

    Gently stir the mixture until smooth with a spatula.

    Filling. For the filling you will need ripe juicy pears and ground cinnamon.

    Wash the pears, dry and cut into medium slices. Cut out the core with seeds.

    Place the pear slices on the dough. Sprinkle the pears evenly with cinnamon. I forgot to do this, so I sprinkled cinnamon on top of the filling.

    Pour the creamy almond mixture on top.

    Place the pie in an oven preheated to 180°C and bake for 30-35 minutes.

    Remove the pie from the oven, sprinkle with almond petals. Place in the oven for another 7-10 minutes until the almonds are browned. Cool the finished pie completely and cut into pieces. Bon appetit!
