Pear pie with cream and almonds

Step-by-step preparation
STEP 1

Dough. Defrost puff pastry.
STEP 2

Roll out the dough into a circle equal in diameter to the diameter of the baking dish, but not very thin.
STEP 3

Cut strips from the remaining dough to decorate the sides.
STEP 4

Place the dough in a parchment-lined baking pan. Form edges on the sides using strips of dough.
STEP 5

Filling. For filling we will need: cream, egg yolks, almonds and sugar.
STEP 6

First, pour boiling water over the almonds and leave for 3 minutes. Then peel off the skin. Grind the nuts in a food processor or coffee grinder into fine crumbs.
STEP 7

Beat the cream with sugar into a fluffy dense mass. You can also add 1 tbsp. l. vanilla sugar.
STEP 8

Add yolks to cream.
STEP 9

Beat everything again.
STEP 10

Add ground almonds to the cream.
STEP 11

Gently stir the mixture until smooth with a spatula.
STEP 12

Filling. For the filling you will need ripe juicy pears and ground cinnamon.
STEP 13

Wash the pears, dry and cut into medium slices. Cut out the core with seeds.
STEP 14

Place the pear slices on the dough. Sprinkle the pears evenly with cinnamon. I forgot to do this, so I sprinkled cinnamon on top of the filling.
STEP 15

Pour the creamy almond mixture on top.
STEP 16

Place pear slices on top.
STEP 17

Place the pie in an oven preheated to 180°C and bake for 30-35 minutes.
STEP 18

Remove the pie from the oven, sprinkle with almond petals. Place in the oven for another 7-10 minutes until the almonds are browned. Cool the finished pie completely and cut into pieces. Bon appetit!
