    How to make pear jam for the winter? For the recipe, choose soft and sweet varieties of pears. Preferably yellow. Instead of stevia, you can classically use sugar. Lemon juice is added to add sourness to the sweet jam. You can adjust its quantity to taste. It will also serve as a preservative for longer storage.

    Wash the pears thoroughly and dry. Cut the peel off them, cut into pieces, removing the cores with seeds.

    Place the cut pears into a saucepan and add boiling water until the water covers the pears. Choose either enameled or stainless steel cooking utensils. Aluminum can react with acid; do not use it in a pan.

    Place the pan with pears on low heat. Bring to a boil and leave to cook for 15 minutes. Foam will form. Take it off.

    Next, add stevia to the pan with pears, stir until completely dissolved.

    When the 15 minutes are up, remove the pan from the heat and mash the pears with a masher until they are pureed. Return the pan to the heat and leave to simmer over low heat for another 20 minutes. Stir the puree from time to time.

    Add lemon juice, you can squeeze it from one lemon slice. Stir. And leave to cook for another 20 minutes on low heat. Stir frequently during this period to prevent the jam from burning.

    The pear jam should reduce until thick and begin to caramelize. When this happens, remove the pan of jam from the heat. Immediately pour it into sterilized jars and close with sterilized lids. Store pear jam in a cool, dry place.

This year we had a great harvest of pears. I wanted to preserve vitamins for the winter, so I made jam according to this recipe. Instead of stevia, I added granulated sugar, and replaced lemon juice with a pinch of citric acid. I cut the pears (they are homegrown), but did not remove the skin, as it is quite soft. I boiled the pears in syrup and mashed them with a masher. Afterwards I boiled it further as described in the recipe. The consistency was thick and chunky. I additionally blended the mixture with an immersion blender and warmed it up. I rolled the jam into jars, leaving some to enjoy now. This winter pear jam turned out amazing. It is fragrant, tender, sweet, tasty, smooth, simply delicious. I’ll make a couple more jars and recommend them to everyone. Thanks to the author👍

Yesterday I made some amazingly delicious pear jam for the winter! My children love almost all dishes, desserts and homemade preparations that include fruit, (except for alcohol, of course) pear jam is not in last place. Thick, with the sourness of lemon, and most importantly, without sugar. Thank you very much for the recipe!
