STEP 1
How to make pea cutlets in a frying pan? Prepare the necessary products. It is better to take split peas rather than whole ones. It will cook faster.
STEP 2
Rinse the peas thoroughly and soak them in cold water overnight. Drain the water. Place the peas in a saucepan and add 3 cups of water. Bring the peas to a boil, cook over moderate heat until tender. Add salt at the end of cooking, when the peas are almost soft. Adding salt at the beginning of cooking will make it difficult to cook the peas and will increase the cooking time.
STEP 3
Place the finished peas in a sieve to drain excess water.
STEP 4
Wash the pre-peeled onions and cut into small cubes.
STEP 5
Grate the washed and peeled carrots on a medium or coarse grater.
STEP 6
In a frying pan, fry the onions in vegetable oil, stirring occasionally, for about 5 minutes.
STEP 7
Place grated carrots in the pan with the onions and stir. Fry the vegetables over moderate heat, stirring until soft.
STEP 8
Combine peas and fried vegetables in a convenient container.
STEP 9
Blend everything with an immersion blender until smooth.
STEP 10
Add egg and flour. Add salt if necessary. You can add any spices to your taste and desire.
STEP 11
Mix everything well. Leave the dough for 15 minutes to allow the flour to dissolve. The pea mass turns out to be quite viscous and tender. But you should not add flour so that the cutlets do not turn out hard.
STEP 12
To reduce the dough sticking to your hands, form the cutlets with wet hands. They can be made round or oval. Bread the cutlets in flour on both sides.
STEP 13
Heat vegetable oil in a frying pan and place the formed cutlets. Fry the pea cutlets over moderate heat until golden brown. This will take no more than 3-4 minutes.
STEP 14
Turn the cutlets over to the other side and fry until done.
STEP 15
Serve the pea cutlets warm. They go well with fresh vegetables and herbs. Bon appetit!
