At the same time, the peas were well boiled, the water almost evaporated. The remaining liquid was drained through a sieve. Onions and carrots were fried in unrefined mustard oil for additional aroma and taste. I punched the “minced meat” with a blender, but did not achieve a smooth mass, left inclusions of peas and vegetables, I like it better) Half of the flour was replaced with potato starch for a more delicate consistency and additional stickiness. The mass turned out to be tender and viscous, but easily molded into a ball. It’s also easy to roll in flour, there were no problems with that at all) I fried the cutlets in mustard oil. Indeed, they cook very quickly in a frying pan. I got rid of excess oil with a paper towel. The cutlets are simply wonderful! They hold their shape perfectly, while being soft, tender and juicy! Very tasty cutlets were made from peas. The children immediately took it with them to a picnic. I soaked the peas overnight and they swelled up nicely. There is no meat grinder, but I used a blender. Otherwise I followed the recipe. Quite a few hard small pieces of peas come across the tooth. But this doesn’t spoil the cutlets at all (you can’t taste the raw peas). Due to the spices and garlic, the cutlets are aromatic and tender. I liked the recipe. Thanks to the author!
