Pasta with pesto sauce and shrimp
Step-by-step preparation
STEP 1
How to cook shrimp pasta? First make pesto sauce. Wash the basil, dry it and tear off the leaves from the branches. Peel the garlic and can cut it into slices.
STEP 2
Cut the Parmesan into cubes. You can use Parmesan at any humidity level. I have young Parmesan.
STEP 3
Pour pine nuts into a blender bowl, add basil leaves, chopped Parmesan, garlic, and olive oil.
STEP 4
Beat everything until smooth. You can vary the consistency using olive oil from a thick paste to a semi-viscous mass dripping from a spoon.
STEP 5
Prepare the necessary ingredients for the dish. You can use any pasta: long (spaghetti, lingivi, fettuccine) or medium (farfalle, penne, fusili, etc.).
STEP 6
Pre-defrost the shrimp and remove the head and shell. You can use any shrimp: regular, king or even larger - Argentinean. Both refined and unrefined. The net weight of the shrimp should be at least 250 g. Therefore, if you take unpeeled frozen shrimp with the head on, then you need to take about 1.5-2 times more.
STEP 7
Boil a large amount of salted water in a saucepan, add spaghetti and cook until al dente. Drain the finished spaghetti in a colander, reserving about 50 ml of the water in which the pasta was cooked.
STEP 8
Peel the garlic cloves.
STEP 9
Heat vegetable oil in a frying pan, add garlic cloves and fry until golden brown. Then remove the fried garlic.
STEP 10
Add peeled shrimp and fry, stirring, for about 2 minutes.
STEP 11
Finally, add salt and pepper to the shrimp and add the spaghetti water.
STEP 12
Add prepared spaghetti and pesto sauce to the shrimp.
STEP 13
Mix everything until smooth. All pasta should be covered with pesto sauce.
STEP 14
Place the finished pasta on plates and serve, garnished with herbs. Bon appetit!
