    How to make oatmeal muffins? Prepare your ingredients. The size of the oatmeal does not matter, because we will grind it anyway. It is preferable to take large ones, because they are easier to sort through and remove debris. But you don’t have to do this. Wash and dry the eggs.

    Grind half the oatmeal into flour in a coffee grinder. Pour the flour into a suitable sized bowl.

    Pour kefir over the resulting oatmeal.

    Mix the oatmeal-kefir mixture thoroughly until smooth.

    Boil water, add sugar to it and stir until it is completely dissolved.

    Pour the remaining oatmeal into a bowl and pour sweet boiling water over it. Stir and leave to cool.

    Combine both oat mixtures, beat in the eggs, add baking powder and salt.

    Mix everything thoroughly. You should get a semi-viscous dough.

    Divide the batter into greased muffin tins. Mine are metal ones. If you use silicone ones, you don’t have to grease them with anything. Bake oatmeal muffins in an oven preheated to 180°C for about 50 minutes. Determine the exact time and temperature based on your oven.

    Cool the finished cupcakes slightly, remove from the molds and sprinkle with powdered sugar.

I replaced kefir with sour cream (which was in stock), and everything else was exactly according to the recipe))) my 9-year-old daughter really liked the oatmeal cupcake))) and I’m so pleased)) without much harm to the figure))) thank you for the recipe
