    How to make tiramisu cake from cookies without baking at home? Prepare your food. You can buy purchased cookies or bake them yourself. You don’t have to use alcohol, but the taste will be richer with it. Take high-quality, natural mascarpone and cream, without vegetable fats. Keep them in the refrigerator until ready to cook. Any coffee is suitable - both brewed in a Turk or a coffee maker, and instant.

    We prepare the cream without raw eggs. Pour the yolks into a deep fireproof bowl, add sugar to them. Adjust its quantity to your taste. Whisk the yolks and sugar until just combined, without beating. Build a water bath - boil some water in a ladle (about half the volume). Place a bowl of yolks on top; the bottom should not touch the boiling water. Using a mixer, start beating the yolks.

    When the mass begins to lighten and thicken, pour in alcohol in portions (I use berry liqueur). Beat the yolks for a few more minutes until they become fluffy and viscous. But don’t overdo it - the yolks can curdle from too much heat, so keep the heat under the ladle low. Remove the resulting cream from the bath and cool.

    Place the mascarpone in another bowl. Start beating it at low speed. When the cheese softens, pour in the cream in portions. Beat the mixture until thick and fluffy. The beaters should leave clear marks and will leave stiff peaks when removed.

    Add the yolk cream into the creamy cheese mixture in three additions. Mix it gently with a hand whisk. As a result, you will get a homogeneous, but fairly fluid cream.

    Take a suitable form for tiramisu. It should be deep enough to fit two layers of cookies and cream. I made half the batch in a mold and half on plates. Pour the coffee into a saucer. You can add alcohol to it. Dip the Savoyardi stick into the drink for a second, no longer - these cookies absorb liquid like a sponge. Place it in one layer on the bottom of the pan.

    Next, lay out another layer of cookies, also dipping them in coffee. Place the cookies in the same order as on the bottom to ensure a nice cut when serving. When serving in portions on a plate, place the cookies on the contrary, in different directions, coating each layer with cream.

    Spread the remaining cream onto the cookies and smooth the top. Or plant it using a cooking bag, it will turn out elegant. Place the dessert in the refrigerator for 8 hours to soak - this is necessary for the cookies to soak and thicken into the cream.
